Cooling.* 

-Hot food stored in the cooler before cooling properly (93.0 degrees) 

-It is very important to cool foods as rapidly as possible to prevent bacterial growth. You must cool hot foods to 70F in first 2 hours then to 41F over the next 4 Hours. You can do this by ice bathing, ice paddles, using shallow containers, a blast chillers or freezer/cooling. Be careful not to overload a cooling unit. If after 2 hours you are not at 70F you must either rethermalized to 165F then recooled or discard and denatured product. You only rethermalize ONCE!! -Temperature must be at 70.0 degrees before putting in the cooler

-Hot water at sink is temporarily shut off due to leaks in adjacent mop sink 

-(A) A handwashing lavatory shall be equipped to provide water at a temperature of at least 43°C (110°F) through a mixing valve or combination faucet.

Cleaning Ventilation Systems, Nuisance and Discharge Prohibition 

-Air vent in kitchen is dirty and not covered 

-Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials. If vented to the outside, ventilation systems may not create a public health hazard or nuisance or unlawful discharge 

-Clean and cover the air vent to prevent contamination of food
